Tian Xiaohua's casserole potato noodles are a bit more resistant to overcooking than Yuan Xian's, they don't break, and the portion is large. The sauce packet makes the flavor richer and fresher, and they taste especially good with cooked lettuce!

It cooks in about 30 seconds when placed in boiling water, so it's best to add it at the very end of the cooking process.
I had these noodles in a hot pot dish. The texture is much better if you soak them for about 8 hours.

Even after soaking for 24 hours, it doesn't have a chewy texture... It just feels soft and mushy...

I guess you have to soak them for a really, really long time. I'm not good at waiting, so I just ate the hard glass noodles... but next time, I'll have to soak them all day.
