This was my first time making turkey legs, and I was surprised to find so many thin bones while deboning. I filled them with glutinous rice and chestnut filling, but I put in too much, so the roll didn't hold together, and it fell apart when I cut it. However, it tasted great, and the glutinous rice was especially popular.
Marinate for 24 hours, then bake until almost cooked through. Add vegetables, brush with sauce, and bake for another 30 minutes (flipping halfway through). The result is perfectly tender and juicy.

This was my first time trying to make salted duck legs. I often ate salted duck at home, but I had never made it before. This time, I marinated the duck legs with fried salt and peppercorns and refrigerated them for two days. Then I boiled water, added spices, onions, ginger, and cooking wine, put the duck legs in, brought to a boil, turned off the heat and simmered for 20 minutes. I repeated this three times. After eating it, my family said it tasted good. Next time I will buy a whole duck and make it again.

I don't know why some people said the duck legs are small. I bought 2 legs. One is a little over 8 oz, and another is 10.5 oz. Good size for me.
