I made saikyo yaki with this sablefish using a marinade of miso, sake, and sugar, and it turned out delicious. The fish is rich and buttery with plenty of natural fat, making it incredibly tender and flavorful. It's one of those fish that goes perfectly with a bowl of hot rice. As a bonus, my dogs love this fish too. I set aside a plain portion before marinating, and they get very excited whenever it's on the menu. A great freezer item for both two-legged and four-legged family members.
