Pea sprouts (0.95-1.05 lbs) are one of our family's favorite vegetables. A serving of about 1 lb is usually enough for one meal. They are bright green and very fresh, and most of them are very tender, although some leaves and stems are a bit tough. Pea sprouts are delicious stir-fried with minced garlic or used in hot pot.
I don't know if it's because it's the right season, but the soybean sprouts I bought twice in a row were of very good quality and were very clean.

I bought these to add to rice noodles, but they aren't the mung bean sprouts I'm used to; they are slightly green. They have a slight grassy smell, so if you don't boil them thoroughly, they smell a bit like grass.
