Garlic scapes are a bit tough. There are some that are too chewy to eat.
Garlic scapes are only in season now. Every time I see them, I have to make stir-fried beef with garlic scapes.
The garlic scapes are bright green and plump, looking incredibly fresh and tender . Just trim off the very thin tip and the tougher parts of the head before cooking. I made braised beef with garlic scapes, and it was delicious . The garlic scapes weren't tough at all
If you can't buy garlic leaves, buy garlic scapes instead.
