I bought this specifically to make Old Beijing-style fried sauce noodles. These noodles are the round, thick kind, and they're incredibly chewy and springy after cooking, perfectly replicating the feel of hand-pulled noodles. Most importantly, they hold the sauce exceptionally well; when mixed with meat sauce and cucumber shreds, every bite is flavorful, and they don't get mushy even after long cooking. If you enjoy noodles with a good texture, this is definitely the top choice, and I'll buy it again and again!

Boil in water for 3mins and noodles will be soft. Can cook as noodles soup or dry noodles - which i prefer. Veg (bok choy) also brought from wee!

This is my second time ordering this noodle. They cook quickly and retain their springy-ness! There are quite a bit of loose noodles that are broken but I am ok with that as all the main round bundles are in intact!
