I usually buy large king oyster mushrooms, but this time I tried these smaller ones. I don't like the strong smell of the large ones, but these were small and easy to use, and perhaps because they were fresh, the smell wasn't bothersome.

The advantage of the mini version is that it's easier to handle You don't need to cut too many; just halve them or cook them whole. The texture is still as expected—chewy and bouncy—and it absorbs broth well, making it perfect for hot pot.
