I bought bamboo shoots and kept them frozen. Today I took them out to stir-fry with king oyster mushrooms, celery, and fried tofu. I sliced the tofu and added some oyster sauce for seasoning. They were delicious!

These bamboo shoots have been refrigerated for far too long. The tenderest parts of the tips have all turned soft and black. They're no longer fresh. The root part was left too long. It's very tough and difficult to peel. I made bamboo shoot and pork rib soup, but it didn't have much of a bamboo shoot flavor.
