I wanted to cut back on oil and make cleanup easier, so I cooked these in my toaster oven instead of deep frying. I lightly brushed both sides with rice oil, baked them at 220C (425F) for 15 minutes, flipped them, and baked for another 15 minutes. The coating turned out nice and crispy while the filling stayed creamy and delicious. One of the best parts is that I can prepare rice, soup, or other side dishes while the toaster oven does the cooking. Since the croquettes are already flavorful, I like serving them with shredded cabbage and rice for a simple, satisfying meal.
