I used these noodles forJjajangmyeon, Korean black bean noodles. They would be delicious and udon soup as well. The noodles are firm but tender. They cook amazingly well in exactly 7 minutes without creating too much starch. My favorite thing about them is that They keep well in leftovers without getting mushy. I am storing the uncooked noodles in the freezer to use as I need them. I will buy them regularly.
