The tofu is soft and tender yet springy, with a delicious bean flavor. Suitable for cold tofu salad, braised tofu, stir-fries, and vegetarian dishes. At home, we often stir-fry dried tofu with shredded or minced meat and soy sauce. My daughter loves this way of cooking dried tofu; she can easily eat a whole bowl of rice with just this one dish.
