Black vinegar is the reason I discovered Weee! in the first place! Essential for stir fries - add some soy sauce, sesame oil and you’ve got your sauce, the sour in sweet and sour. The aged vinegar is pricier and the cheaper stuff is honestly probably pretty similar. But I love Zhenjiang vinegar so splurge on the good stuff and make sure I never run out.

Very classic
I often use this Zhenjiang vinegar for cooking and making cold dishes. Its sourness is very mild; it doesn't have an overpowering, harsh taste that makes you grimace. The acidity arrives very gently. Up close, you can smell a rich, fermented aroma—not just a simple sourness, but a mellow flavor unique to fermented grains. Dripping some into cold dishes brings out the natural flavors of the ingredients, making them refreshing and light. It's also great for dipping dumplings or preserved eggs; the taste is smooth and doesn't leave a harsh aftertaste. Adding a little to dishes also works well to remove fishy smells and enhance flavor. After heating, the pungent sourness dissipates, leaving only a subtle vinegar aroma infused into the dish. Even with a slightly larger amount, the overall taste remains mild, with a hint of sweetness at the end—a very natural flavor.
I thought glass bottles would be difficult to transport, but the packaging was excellent. Thumbs up!
