There were reviews saying it was tough, and it really is. I added pear juice and mirin and seasoned it with bulgogi sauce, but the meat is still tough, maybe because of the tendons.

This beef shoulder is alright, lean. The other cut, beef brisket, is no good, too fatty. The picture shows the latter, not good.
