I use the fatty Wagyu beef for curry! Searing it first makes it very fragrant and renders out the fat.
This one is slightly better; the other beef ribs were too fatty and oily.
Vietnamese-style stewed beef ribs are easy to flavor.
The beef short ribs are of very good quality; they're delicious after just a quick marinating and stir-frying. They have a good balance of lean and fat, and I would definitely buy them again.
It was nicely packaged. I'll use it for yakiniku (Japanese BBQ).
