I cooked shrimp wontons in my homemade chicken broth, then added bamboo shoots after the water boiled. They were very fresh and sweet. Thawing bamboo shoots in boiling water is the closest to cooking them fresh; do not refrigerate or thaw them at room temperature, as this will cause the ice to crystallize.
