I made sweet and sour pickled fresh ginger. The recipe is simple: blanch thinly sliced ginger in boiling water for 30 seconds, then heat the basic recipe (fresh ginger: 300ml, vinegar: 200ml, sugar: 4-6 tablespoons, salt: 1 teaspoon) until the sugar dissolves, then pour it over the sliced ginger in a jar. It's ready after 2-3 days of pickling. Homemade food is always good because you can eat it with peace of mind
The ginger flavor is very fragrant; it would be even better if it were more tender.
The portion size is quite generous; it looks very large.
One pound of young ginger, not particularly tender, suitable for stir-frying and pickling.
