Pea sprouts (0.95-1.05 lbs) are one of our family's favorite vegetables. A serving of about 1 lb is usually enough for one meal. They are bright green and very fresh, and most of them are very tender, although some leaves and stems are a bit tough. Pea sprouts are delicious stir-fried with minced garlic or used in hot pot.
