I had these noodles in a hot pot dish. The texture is much better if you soak them for about 8 hours.

I used it in Mala Xiang Guo, but I think I can use it in other dishes too! It tastes delicious if you blanch it briefly for less than a minute. If you blanch it for too long, it breaks easily.

I cooked Ginisang Monggo yesterday, and my husband (American) really loves the Ginisang Monggo, and We ate it this dinner again, and I still have more in the fridge I'll try to finish it tomorrow.
